Duck Stir Fry

 Duck Stir Fry


Ingredients:
  • 4 tbsp dark soy sauce
  • 2 tbsp clear honey
  • 4 skinless duck breasts
  • 12 oz. bag of fresh mix stir fry vegetables (broccoli, snow peas, carrots, cauliflower)
  • 2 garlic cloves, minced, about 1 1/2 tbsp
  • 2 small sections of fresh ginger, minced, about 2 tbsp
  • 1 medium onion, rough chopped
  • Bunch spring onions
  • 1 tbsp vegetable oil
Cooking Method For Duck Stir Fry:
1. In a large bowl, mix together the honey and soy sauce. Slice the duck and toss in the honey marinade. Set aside for 5 minutes. Meanwhile cut the spring onions into thin strips. . 
2. Heat the oil in a wok or large frying pan. Lift the duck from the marinade (reserve the marinade) and stir-fry the duck for 5 minutes until browned all over. Remove and set aside. Add the chopped onion,garlic and ginger.,stir-fry for 3minute.
3. Add the spring onion, mix stir fry vegetables and browned duck. Pour over the marinade and stir-fry for 10 minutes – the duck should still be a little pink in the middle.
4.  Season to taste and serve with cooked rice.

Curry Chicken Tikka Masala

I think lots people like curry. Last week I cooked curry chicken tikka masala. If anyone want my recipe...here my easy curry chicken tikka masala recipe. Its easy to cooked , simple and delicious.

Curry Chicken Tikka Masala

Ingredient:
  • 1 pint of live natural yogurt/ fresh cream
  • 1 Tablespoon Cumin powder
  • 1 Tablespoon Garam Massala
  • 1 Teaspoon Coriander powder
  • 1 Teaspoon Turmeric powder
  • 1 Teaspoon Chilli Powder
  • 8 cloves garlic - crushed
  • 1 inch grated ginger
  • 4 Chicken Breasts Cubed 
  • 1 Chop Onion
Cooking method for Curry Chicken Tikka:
1. Pour the sunflower oil into a large, preferably non-stick, lidded pan and set it over a medium-high heat. When the oil is hot, add the onions. Stir and fry until they brown, for 6-7 minutes. Add the ginger and garlic and continue to fry, stirring, for a minute.
2. Add the ground coriander, turmeric, chilli powder and cumin powder. Stir for 10 seconds, then add the chicken breast cubed ,stir and mix well. Than a tablespoon of yogurt. Stir and fry until it is absorbed. Add the remaining yogurt in this way, a tablespoon at a time.
3. Add the tomatoes and fry for 3-4 minutes, or until they turn pulpy. Add the stock and ¼ teaspoon salt, and bring to a simmer. Cover, reduce the heat to low, and simmer gently for 15-20 minutes. The sauce should turn thick.
4. Stir in the garam masala and coriander leaves, taste and add more salt if you need it. 

5. When the chicken cooked, reheat the sauce and serve it with pilau rice .

Peri-Peri Chicken

Peri-Peri Chicken 


 Ingredients:

1/4 cup paprika
2 tablespoons hot chili powder
1 cup fresh lemon juice
3 cloves garlic, minced
1 1/2 teaspoons chopped fresh ginger
1 1/2 teaspoons salt
4 bone-in chicken breast halves

Cooking method for Peri-peri chicken:
 1.In a large bowl, stir together the paprika, chili powder, lemon juice, garlic, ginger and salt. Rub chicken with the mixture, place in a dish, and marinate for 3 hours. 
2.Preheat a grill for medium heat. 
3.Place chicken onto the grill and discard the marinade. Cook for about 30 minutes, turning occasionally, until the skin is slightly charred and juices run clear.
4. Served it with salad and mashed potatoes .
